Abstract
Taking the serum of domestic chicken and black chicken as the research object, the content of cholesterol and the activity of glutamic pyruvic transaminase in serum were determined and compared, and the contents of albumin and γ-globulin in serum were separated and identified by cellulose acetate membrane electrophoresis. The results showed that the cholesterol content of domestic chicken was higher than that of black chicken, which was 1.3 times higher than that of black chicken. The glutamic pyruvic transaminase activity of black chicken was 1.35 times higher than that of domestic chicken. On the one hand, the study compares the nutritional value of the two kinds of chicken, which provides a new basis for the purchase of consumers and the development of related products; on the other hand, the level of serum ALT has important clinical significance in the early diagnosis, evaluation and prognosis of liver cirrhosis.
